1 kilo of cherry tomatoes |
1 bunch of fresh oregano |
4 garlic cloves |
½ cup extra virgin olive oil |
Salt & pepper to taste |
INSTGRUCTIONS
1 - Preheat oven to 350˚F (175˚C).
2 - Slice cherry tomatoes in half.
3 - Arrange them cut side up on one or two baking trays, depending on the size.
4 - Finely mince the garlic and sprinkle it over the tomatoes.
5 - Chop the oregano and add it as well.
6 - Drizzle the olive oil evenly over the tray.
7 - Season generously with salt and pepper.
8 - Roast in the oven for about 45 minutes, or until the tomatoes are soft and slightly caramelized.
9 - Remove from the oven—et voilà! You now have a rich, slow-roasted cherry tomato base.
